For the Chopped Chicken Salad
- 2 cups shredded rotisserie chicken
- 4 cups chopped iceberg lettuce
- ½ cup cherry tomatoes halved
- ½ cup diced cucumber
- ¼ cup red onion thinly sliced
- 1 ripe avocado diced
- 4 slices cooked bacon chopped
- ¼ cup crumbled feta cheese
For the Honey Mustard Dressing
- 3 tablespoon Dijon mustard
- 2 tablespoon honey
- 3 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Prepare the Salad
In a large bowl, combine iceberg lettuce, cherry tomatoes, cucumber, red onion, avocado, bacon, and rotisserie chicken.
Sprinkle with crumbled feta cheese.
Mix the Dressing
